Chef Greg Arsenault to prepare banquet at 2022 Entrepreneurs’ Gala

ABRAM-VILLAGE – March 7, 2022 – « We are honored to have a chef of Greg Arsenault’s caliber and reputation prepare the delicious banquet for our 2022 Entrepreneur Gala! » says event coordinator Raymond J. Arsenault. « As we recently learned, Chef Greg is in the process of setting up his own restaurant – La Rose Bistro – at Avonlea Village in Cavendish but will take the time to return to his home area to oversee a great team to prepare our supper. »

Chef Greg has worked as a chef for 12 years; he received his Red Seal certification in 2017. This past summer, he was very busy as the chef at Blue Mussel Cafe in Rustico. Prior to that, he worked at a variety of locations, including The Home Place in Kensington where he helped create Burger Love’s champion burger, The Cabbage Patch, in 2017.

At the 2022 Entrepreneur Gala on Saturday, April 9, he will be serving the following meal:

Appetizer: Garden salad composed of cucumber, tomato, carrot, pickled onion and roasted beet, served with curried apple vinaigrette or apple grainy mustard vinaigrette.

Main course: Chicken Supreme featuring seared chicken, whipped potato, seasonal vegetables, bacon-tomato jam.

Dessert: chocolate cake, chocolate ganache, pistachio brittle.

As a vegetarian option, he will serve:

Appetizer: Garden salad composed of cucumber, tomato, carrot, pickled onion and roasted beet, served with curried apple vinaigrette or apple grainy mustard vinaigrette.

Main course: Quinoa, goat cheese and other vegetables wrapped in a zucchini parcel with bacon-tomato jam served on rosti potato.

Dessert: Fruit salad.
